Spring Cookies!!

Spring is finally here!! Hailey is celebrating Earth day and Easter at school tomorrow so she asked if we could make some special treats for all her friends. We decided to make cookies on sticks as these were a big hit at the Valentines day party.

These sugar cookies are iced with festive spring colours and for a bit more spring we added some white fondant flowers.
Some of the cookies are attached to sucker sticks, which kids love, and are wrapped in plastic and tied with a bow. I made extras without sticks too.

Bunny Easter Treats

I was asked to make these little bunny treats for an up coming Easter event. They're made from rice krispies and covered in white chocolate, all the detail is chocolate as well. I used the method in my previous post to make them. Super easy and fun to make!

Easter Treats Tutorial

Hailey asked me if we could make some Easter treats this past week. I was already making lots of rice krispy treats for cakes so I thought we could do something with them.
These little Easter eggs are rice krispies covered in white chocolate and decorated with coloured sugars. They are great to do with kids and very easy.

What you'll Need
Rice krispies
Marshmallows
Butter
Vanilla
White chocolate or any coloured chocolate melts you can get them from the Bulk Barn
Sucker sticks also at the Bulk Barn
Coloured Sugars

Make a batch of rice krispies, recipe is on the box, and shape them into easter eggs. You could also shape them into little bunny heads too. I find it helps to rub some butter on your hands this makes the rice krispies not stick to your hands. Let the treats sit out for a bit to firm up.

Melt some chocolate melts in the microwave. Start with 35 seconds in the microwave and stir, the heat from the bowl will help melt any little lumps. Make sure the chocolate is completely melted.

Dip a end of the sucker stick into the melted chocolate and insert into the shaped rice krispy treats. Give them a few minutes to firm up.

Dip the rice krispy tearts into the chocolate. I only cover one side but you could do both. I find it helps to use a spoon to cover any areas you missed. Tap the treat on the side of the bowl to make the chocolate smooth and place on a piece of wax/partchment paper. I dipped mine treats twice so the finish was smoother. The one on the left is one dip and the one on the right is two dips.

Once the treats are completely dry put some melted chocolate in a zip lock bag and cut a small hole in the corner. Drizzle the chocolate onto the treats in any design you want and dip/sprinkle immediately with coloured sprinkles.

Once the treats are dry you can package the in little bags and bows.

Surprise Wedding Shower Cake

My weekend was full of surprise parties and cake, what a weekend! This cake was made for one of my best friends. She's getting married in July to one of the sweetest guys I know so her mom and the bridal party threw her a surprise wedding shower.

This cake was very fun to make but very difficult and frustrating. The wedding colour is persimmon which I thought would be an easy colour to match...NOPE!! I looked on-line at colour swatches and every single one was different, some more orange some more red. The swatch I remember seeing was a reddish colour with organge undertones so I finally decided to use two variations of what I thought the colour persimmon looked like.

The top tier is a 4" chocolate cake with two tortes of chocolate chip cookie dough filling and a torte of vanilla buttercream. The second tier is a 6" vanilla cake with two tortes of chcolate buttercream and a torte of vanilla. The bottom tier is the same as the 6" top tier.

The flowers are made from fondant, imprinted and finished off with a small edible pearl.

Surprise 50th Birthday Cake

This cake was made for a surprise party for my friends mom Kathy. The colours for the party were green and black so we wanted to incorporate those colours into the cake. I was given a picture of cake but we changed the colours and design a little and came up with this cake.

The 6" top tier and the 8" middle tiers are made from rice krispy treats and covered in fondant. My friend wanted to have the height and grandeur of a three tiered cake but didn't need all the cake so we used rice kripsies as 'dummy cake'...mind you the rice kripies covered in buttercream and fondant are really good to munch on!

The bottom 10" cake is chocolate cake filled with vanilla buttercream and covered in fondant. All the decorations including the bow and spirals are made from fondant.

I had a lot of fun making the bow, I kind of changed the design of the bow last minute but I'm glad I did, I'm really happy with how this cake turned out!
